Shakshuka is an Arabic dish and it's basically cooked in tomato sauce. Rich in tomatoes and red peppers, this recipe is ideal for filling up with vegetables. It also contains as a final touch some eggs.
Put the oil in a pan. Once the oil is heated add chopped onions then add ginger garlic paste and now cook them together for a few minutes until the onions develop some colour maybe 2 to 3 minutes is good so now after a few minutes the onions has cooked a little bit and it has developed a very nice colour Then add the peppers today I'm using green chilli peppers but of course if anyone don't like too spicy food you can simply use green bell peppers so that's optional. Cook chilli with the onions and ginger garlic paste for a few minutes maybe about 2 to 3 minutes.
After that add chopped tomatoes and then cook them for additional 1 to 2 minutes after that colours looking very beautiful so after a few minutes all my veggies have cooked down a little bit now I'm going to add little bit water and this step will give this dish very nice and deep flavour for the sauce so take your time and cook it for about 2,3 minutes more.
of course, don't forget to season with some salt, red chilli powder, cumin powder, coriander powder, paprika powder and black pepper powder and then continue cooking for about 3 to 4 more minutes or until sauce fully cooked. Add bit more water and now cover the skillet and let it simmer for about 1 to 2 minutes and after that you'll notice that the sauce is bubbling and it's becoming thick it’s looking so good. Now at this point you want to let it simmer without the lid for additional 1 to 2 minutes until it thickens more because for today's dish, we want a very thick sauce we don't want it liquidly at all so let it simmer for a few minutes
After that sauce looking thick now make five holes in the sauce. Now going to crack each egg in a bowl and let's make sure that egg is good so that it doesn't ruin whole sauce and put each egg in one hole. Now you lower the heat put it on low and let the eggs cook slowly. Some people like runny yolks and some like fully cooked if you don't like runny egg yolk just simply cook the eggs longer or until the egg whites and egg yolks are fully cooked. After few minutes shakshuka is done and ready to eat.
To Be Served you can eat it with any kind of bread, chapatti, paratha anything you like and garnish it with some chopped coriander leaves or parsley.
