Tortillas

Tortillas are the basic ingredient in making enchiladas. They should be large enough so that they can be easily filled and folded.

The garnish

Chicken is the most commonly used meat for enchiladas, but it is also possible to use beef. For a vegetarian recipe, you can use beans.

Cheese

The cheese is the final touch for the enchiladas: it is sprinkled on the tortillas, on the sauce.

The sauce

It’s the sauce that will really differentiate enchiladas from burritos and tacos, so it’s the most important ingredient in the dish. You can add cilantro, parsley, lemon juice or garlic to enhance its taste.

For filling:

Chicken mince 1/2 kg
Oil. 2 tbsp
Chopped onion   1 cup
Garlic paste. 1 tsp
Tomato 2 ( make a paste)
Salt 1 tsp
Red chilli powder 1 tsp
Cumin powder 1 tsp
Black pepper powder 1/2 tsp
Vinegar 2 tbsp

For sauce:

Oil 2 tbsp.
Onion 2tbsp ( chopped )
Tomato 3 ( big and chopped )
Tomato ketchup 1/2 cup
Garlic paste 1/2 tsp
Sugar 1 tsp
Salt 1/2 tsp
Cumin powder 1/2 tsp
Coriander powder 1/2 tsp
Oregano 1/2 tsp

For Tortilla:

Plain flour   2 cup
Salt 1 tsp
Baking powder 1 tsp
Oil 2 tbsp
Luke warm Water As required

Tips:

Fried rice
Fried rice is a great classic of Mexican cuisine, it is a good way to make the dish more substantial if it is served for dinner for example. You can add meat and vegetables, or serve it plain so that it absorbs the sauce of the enchiladas.

Served as is or with tortilla chips, the bean puree will go perfectly with your enchiladas dish.

Step 1

Filling: Add 2 tbsp oil in a pan add 1 cup chopped onion and stir them like they become soft and change their colour then add garlic paste , tomato paste , chicken mince , salt , chilli powder ,black pepper powder , cumin powder , and vinegar and cook them well and set aside.

Step 2

Sauce: Add 2 tbsp oil in a pan and soften the onion in it then add garlic paste , chopped tomato , salt , chilli powder , sugar , cumin powder , coriander powder and cook well when sauce is ready add oregano.

Step 3

Tortilla: Add all the ingredients in a bowl and make a good soft dough. Then rest it for 30 min. After that divide dough equally in 8 to 10 parts and make tortillas and cook them on a tortilla pan like half done not fully done.

Step 4

Assemble: Spread some sauce and cheese in a serving dish . Put filling in tortillas and roll them then put all rolled filling tortillas on serving dish up to the sauce then put remaining sauce on all tortillas and after that spread lots of cheese and some chilli sauce.

Step 5

Baking time: Pop it into the preheated oven at 200c for around 25 to 30 minutes or until the top is beautiful golden brown.
