A little-known diet

The South American diet is nothing like its westernized version, and Mexican cuisine is much healthier than it looks!

Some of the staple foods of this diet include beans, seeds, potatoes, tomatoes, peppers, avocados, corn, legumes, spices! In other words, foods that are beneficial to health. In addition to these foods, the Latin American diet gives an important place to cooking, in particular grilling for meat and emphasizes good culinary practices, such as the combination of vegetables and colorful fruits, homemade.

Healthy dishes

Certainly, if you are not an expert in Mexican cuisine, it is difficult to count the calories in a restaurant. Here are a few dietary guidelines and tips for making the right diet choice.

As a starter, why not try a ceviche: it is raw, marinated fish or seafood. Guacamole, gazpacho, black bean or tortilla soup, so many specialties that will ensure you a gourmet and healthy entry. At home, you can concoct a Mexican salad made with corn, zucchini, and red beans.

As for the main course, prefer fajitas made with lean beef, chicken or shrimp with quesadillas or enchiladas, tortillas stuffed with cheese. At home, make your fajitas with slimming vegetables (broccoli, zucchini, etc.).

If you are a bit adventurous, try the nopal! The latter is rich in fiber, calcium and beta-carotene, has many properties, in particular that of limiting the absorption of sugars and fats. It would also have the power to decrease the virulence of the hangover.

The nopal is also very tasty. Its particular taste, slightly acid, reminds of both sorrel and asparagus in Mexico. Its rackets can be grilled on the barbecue, mixed in yogurt, in soups.

WHAT IS IN THE ENCHILADAS?

Authentic Mexican cheese enchiladas is a Mexican dish where the tortillas are rolled with a filling and covered with a spicy chilli sauce and they’re baked along with cheese making them rich spicy and delicious flavour. Today I’m going to show you how to make the enchiladas.

There are different ways to cook enchiladas, but generally they are made with meat, vegetables, beans, cheese, sauce and tortillas. Other ingredients are frequently added such as sour cream.

Tortillas

Tortillas are the basic ingredient in making enchiladas. They should be large enough so that they can be easily filled and folded.

The garnish

Chicken is the most commonly used meat for enchiladas, but it is also possible to use beef. For a vegetarian recipe, you can use beans.

Cheese

The cheese is the final touch for the enchiladas: it is sprinkled on the tortillas, on the sauce.

The sauce

It’s the sauce that will really differentiate enchiladas from burritos and tacos, so it’s the most important ingredient in the dish. You can add cilantro, parsley, lemon juice or garlic to enhance its taste.
